Made with a combination of Rye and Wheat flours, this bread contains another tiny superfood Chia, as well as nutritious Mung Beans and Flaxseed. Each of these three ingredients packs a huge nutritional punch, and this combined with the Low GI and fermented-food benefits of sourdough (unyeasted) bread makes it a really special loaf!
Chia (tiny white and blackish seeds on top and throughout loaf)
An ancient grain from South America, chia has an unusually high content (18%) of omega-3 fatty acids – essential fats that are important for heart health and brain function which are found usually in oily fish.
It earns its superfood tag by also being also extremely high in fibre for digestive health (helps you feel full longer too!) as well as protein for muscle repair and building and calcium for bone health.
Mung Beans (greenish round grains)
Mung beans are a high source of many vitamins and minerals, add a nice nutty taste and texture and are also a very filling food, high in protein, resistant starch and again dietary fibre.
Flaxseed (Tiny red-brown oval-shaped seeds)
This is the same as Linseed (it’s just another name) and again an outstanding source of fibre and Omega 3’s for our bodies.
